Mango Salsa

Brazilians really don't know what they're missing in Mexican food! I still can't find sour cream, but I have found one shop that sells pretty good tortillas and Dori brought us some fajita mix, so while she was here we made Pineapple Fajitas with Fresh Mango Salsa and because we can't buy them, homemade tortilla chips.

SO, SO GOOD.
I made Mango Salsa again tonight, and this time I wrote down our recipe. Try it:

Dori and Mary's Mango Salsa

1.5-2 mangos, diced (depending on how much of the mango you eat while you're cutting it, because you will.)
1 onion, finely chopped
1 yellow pepper, finely chopped
1 Roma tomato, finely chopped
2 cloves of garlic, minced
2-3 Tbsp cilantro, chopped
juice of 1 lime
1-2 tsp salt

Mix, refrigerate, salivate, serve.

I feel like a celebrity on your blog. I saw round trip airfare NYC to Rio for $499. I am feeling some major school avoidance-so tempting to escape to Rio again.

I hope you put Matt in charge of the chips this time. I need to make some Salsa!

You make me cry for mangos!! I hate that they are a fortune here. We will have to splurge on week and make a mango salsa so I can feel better about our location. can I have the recipe for the homemade tortilla chips?? (we don't have sour cream either - I understand your woes)
